Wine making tasks in the cellar are distributed throughout the year as follows
Clearing of the wine (with egg whites): January
Filling of casks with new wine: January - February
Cleaning, sulfuring and refilling of casks: March
Decantations: April
Bottling of prior vintages: May
Storage and preparation of casks: June
Decantations: July
Labeling of bottles: August
Preparation of the cellar to receive harvest: late September and October
Pressings – fermentation, pumping over, decantation, etc.: November to early December
Tasting of new wine: December
